It goes like this- Every Wednesday, our tasting day where the wineries come by to taste us on the new and the tried and true labels, falls victim to potential over-booking. Representatives who can t manage to get an available tasting slot often drop off full bottles of wine so that we may open and taste at our next opportunity, generally speaking, which is often sooner than the 30-45 days in which we typically book out in advance. You can probably imagine how many bottles we collect during a 2 week period. Recently we decided to hold Acme staff blind tastings with the accumulated wines to sit down and get a group perspective of each wine as it was presented in the most ideal manner: blind. No preconceived notions with the winery owner or winemaker sitting across from us and no stories about the wines being told while we tasted, as is the case when we are with winery folks. There isn t anything right or wrong about the aforementioned situations, however, it is a stripped-down, no frills manner of tasting when done blind and that almost always tells the true tale of like or dislike. To make a long story much longer, we blind-tasted Respite alongside several other wines in varying price points and chose it as the unanimous winner. In similar settings approximately 2 months prior, we blind-tasted Mirror and Hollis with each of those coming out on top of their competitors. What does all this mean? It means we aren t falling in love with the wine s story, the vineyard stats, the label, the hot winemaker sitting across from us nor the collective mass of information and tactile paraphernalia presented to us in a 30 minute time slot. We have blindly fallen in love with what is in the bottle. This wine, as you may have noticed, is from Alexander Valley. How many times have you seen one of those written about in an ACMeLOG? Once? Probably. Whatever that wine was, and we obviously felt strongly about it then or we wouldn t have advertised it to sell in our shop, it has now been replaced by this wine for this is stellar juice. It oozes quality. It screams quality. It takes the habitual skeptical people out back and smacks them around to say  Yes, it is THAT good . We wouldn t write about it if we didn t think it had WORTH IT written all over it. This time, his very new wine sports a name embraced by no less than five languages. That word is saldo. If you happen to find yourself in Italy, Spain, Basque Country, Finland or California's own Napa Valley, you'd be wise to know the word &quot;Saldo&quot;, or balance. (As in, &quot;this blend of stunning Napa Valley and surrounding counties vineyard sources delivers such a remarkable saldo&quot; or &quot;Holy cow! Look at the delightful status of my bank account saldo! ) Here's what works: Dave has always been able to work like a painter, using a dab of this, more of that, to create together an harmonious, enjoyable blend, as evidenced by his blockbuster Prisoner or the equally beloved Papillon. With &quot;Saldo&quot;, he sources Zinfandel and small amounts of Petite Sirah and Syrah from some of his preferred vineyard sites. The resulting wine is a dark, spicy, Phinney-esque total crowd-pleaser. If you love the spicy, juicy build of the Prisoner, and don't mind being charged a couple of dollars less per bottle, we have your new Pizza and any night of the week wine. If you can remember back to the first vintages of his Zinfandel only label, this is the rebirth under the Saldo label. It s back and it s got something to prove. Not only will you be floored that this wine is one of the most delicious merlots you ve ever tried, but you will think it is a merlot in cabernet clothing making it one of the most delicious cabernets you ve ever tried, too. It s all a bit confusing to the everyday senses, but we feel a celestial familiarity will no doubt arise giving you an opportunity to experience what most will not in an entire lifetime. The 2006 is, in my opinion, even more intense and concentrated than the 2005. Paul Hobbs has done a remarkable job with the fruit from this vineyard. The wine shows a beautiful dark fruit with a hint of minerality and an extraordinarily long finish.
