The 2019 Pas de Cheval “Prelude” debut is 100% Cabernet Sauvignon fruit from the red volcanic soils in the heart of Oakville.  Maayan selected four different coopers (Taransaud, Ermitage, Sylvain, and Demptos) to age the Prelude.  70% of the barrels were new, and the wine aged for 20 months before bottling.   In Vanessa’s words the Prelude is “Equal measures of perfectly ripe fruit and savory herbal flavors are bound by supple, tongue-coating tannins.  Highly concentrated at its core, this is a robust and highly complex wine, seamlessly integrating notes of blackberry, cassis, licorice, tilled earth, mint, and herbes de Provence.” This bottle is wine’s equivalent of a chart-topping hit and a great start to what will be a beautiful evolution of Pas de Cheval wines this summer.

The 2019 Intermezzo is a prime example of Cabernet Sauvignon's playful duality of vibrant, blossoming aromatics and deep-rooted, intense full body.  Another 100% Cabernet Sauvignon from Clone 4 vines grown on the westside of Saint Helena.  The alluvial soils fanning out from the base of the Mayacamas provide rich nutrients and positive stressors on the vines, forcing them to grow deep down for water sources.  The resulting grapes are concentrated in color and flavor, with hard-to-match depth and complexity.  The aging for the Pas de Cheval Intermezzo changed slightly from the Prelude, with the wine spending 20 months in 75% new French oak versus the 70% for the Oakville fruit. The wine's deep purple-black hues are complemented by overwhelming aromas of blackberry pie, crème de cassis, cedar, cocoa powder, and fresh spearmint.  In Vanessa's words, the palate is "rippling with flavors of Black Forest cherries, blackberry, toast, vanilla, and subtle hints of tobacco." While it seems it couldn't get much better than the Intermezzo, we think you should stick around for the final act in Pas de Cheval's debut release. The 2019 Finale is another spectacular 100% Cabernet crafted by Maayan Koschitzky. The 20 months in 70% new French oak set the scaffolding for the already powerful single vineyard fruit sourced from high up in the appellation. The Cabernet is richly hued purple, almost black, and benefits from time to open. After breathing, the nose is ripe with freshly baked blackberry pie, strawberry liqueur, tobacco, dark chocolate, and espresso. Silky tannins masterfully weave through the dense and energetic core, lingering on the finish. Flavors of vanilla, baking spice, violets, and freshly tilled earth overwhelm the palate and will age gracefully and evolve for years to come. In the progression of the 2019 Pas de Cheval Cabernets, Finale befittingly brings the house down with its robust and rich sophistication.
