Copenhagen Sparkling Tea Company BLA

Food and wine pairing can be a fickle art and for sommelier and Copenhagen founder, Jacob Kocemba, it was one particular dish that stumped him which served as the spark for crafting his sparkling teas.  While working at a Michelin-starred restaurant, he found a blended tea extract matched best with a dessert course even when searching through the restaurant's 1000+ bottle wine list.  As Jacob tweaked the extract recipe with various teas, the beverage became a guest favorite and Copenhagen Sparkling Teas was born.  He joined forces with Bo Sten Hansen in 2017 to officially launch their brand and share his creations with the world at large.

BLÅ is crafted from Black tea (13% Jasmine, 3% Darjeeling), White tea (19%), Green tea (19%), Herbal tea leaves, grape juice, lemon juice, and natural aromas.  After brewing, the tea rests for two to three months before bottling.  "BLÅ starts out with delicate aromas of Jasmine, chamomile and a hint of citrus. This is followed by a round taste from the careful selection of white teas and accompanied by good complexity and depth from the green teas.  It ends in a long finish joined by comfortable tannins created by the Darjeeling First Flush.
