The Boudin family of A. & F. Boudin owns the Chateau de Chantemerle (birdsong) estate in La Chapelle Vaupelteigne. For three generations, they have produced beautifully aromatic wines from Chablis. Today, winemaker Francis Boudin works side?by?side with his
daughters, Angélique and Virginie, in the cellars and fields. They prefer to craft artisanal Chablis as authentically as possible as opposed to falling into the ranks of modern winemaking. They did not replant to high-yielding clones, a fad in the 1970s, and their family mantra rings true to the next generation of Boudin members: "Barrel-free Chablis". When Adhemar Boudin, Francis' father, began making wine for the family, he knew it would be without any oak influence. While growing up, his father was a cooper. The very smell, noise, and mess turned Adhemar off of electing to use it in his wines. His preference was stainless steel and cement tanks. Today, his son Francis keeps his father's philosophy alive by honoring the decision to keep barrels out of the family wine program, allowing the purity of fruit to showcase the terroir and natural Chardonnay aromas and flavors.
