The Cerbaiona manor dates to the 17th century, but the estate made its winemaking debut as a star producer of Montalcino with the 1981 vintage. Over the years, under Diego Molinari's direction, Cerbaiona has established a reputation as one of the great Brunello producers. In the mid-2010s, winemaker Matthew Fioretti, along with a group of investors, purchased the estate and now oversees the vineyard and cellar. While continuing Cerbaiona's legacy, Matthew has created something of his own with M.L. Fioretti, where his passion for Bordeaux varietals embraces the exceptional Tuscan terroir.
Matthew argues that highlighting foreign varietals grown in Tuscan soils does not diminish Italian heritage but instead showcases Tuscany’s superior viticulture. When paired thoughtfully, Bordeaux varietals planted in the right parcel flourish beyond expectations, and in Matthew’s opinion, often outshine and surpass a wine of local varietals from the same plot.
His Santinovo Rosso comes from an old estate named Borgo Santinovo in Colle di Val d’Elsa, about 65km north of Montalcino. 2021 marks just the second vintage where Matthew “experimented” and vinted wine from these Bordeaux vines. The blend melds 80% Cabernet Franc with 20% Cabernet Sauvignon, which, in combination with the cooler climate to the north, results in firm structure and bigger tannins. After hand-harvesting, the wine was cold-soaked for 3 days and fermented in stainless steel. Once fully dry, the wine aged for 14 months in new French oak barriques. Savory overtones dominate the nose and palate with dried herbs, tobacco, and earthiness, while bursts of pure red and black fruit notes offer clarity and a welcome freshness. Only 4 barrels crafted!
