At the small, family-run domaine in Chablis, the story of the 2013 Les Lys 1er Cru is less about vintage charts and more about patience — the kind that feels almost rebellious today. Years ago, when the domaine sold primarily to locals, the wines would rest in tank and be bottled only as needed to fulfill orders. What they discovered, almost accidentally, was that time in tank wasn’t diminishing the wine — it was refining it. The aromatics sharpened. The texture lengthened. The tension articulated.
